The obvious reason that tubeless tire sealant is a problem for bike pump heads is because tubeless tire sealants are made of glue with additives and fibers designed to block holes and seal them up. When you attach a bike pump to a tire valve, you are creating a hole when you open the valve, and sealant flowing into it will attempt to seal and close the hole.
Many conventional bike pump heads are not suitable for filling tubeless tires because they cannot cope with the sealant, which blocks narrow spaces and airways built into the pump head and valve operating systems.
